We needed something to ferment in that can maintain the mash temperature for fermenting. We needed to hold a temperature of 18\u00b0C to 24\u00b0C, so we set the controller at 21\u00b0C +\/- 2.5\u00b0C.<\/span><\/p>\n

We set the chiller to its maximum cooling temperature (-3\u00b0C) and the heaters to their maximum (32\u00b0C).<\/span><\/p>\n

When the temperature reaches 23.5\u00b0C the chiller and the pump will turn on, until the temperature is 21\u00b0C, and when the temperature reaches 18.5\u00b0C, the heaters will turn on until the temperature is 21\u00b0C.<\/span><\/p>\n

To fill our barrel we calculated that<\/span><\/p>\n

175 Litres @ 15% ABV will distill to 26.25 Litres @100% Alcohol<\/span>
\n175 Litres @ 20% ABV will distill to 35 Litres @100% Alcohol<\/span><\/p>\n

So we picked a 220L plastic barrel for the mash.<\/span><\/p>\n
