French and American oak barrels have been use to flavour ethanol for many years. Some now even put oak in the ethanol known as sitting on oak, we like to put in oak as this gives age as well as flavour take 3 to 4 years in a standard 200L barrel, as you can see in the chart a 10L barrels will take from 12 to 17 months this is due to the surface area.
The ageing come from the ethanol evaporating 2.4% from the barrel every year call the angles share this means that the % of the ethanol will also drop a little.
Still cast can be as high as 96% but for the most part the ethanol is proofed down to 84 to 52.5% before adding to the barrel our 1st barrel call Logon`s Run a sweet American corn whiskey barreled at 75% ABV
